Roasted Cinnamon Almonds

My tiny jars make my giant hands look even bigger! Great!

Okay I’m almost halfway through whole30 and I fricken miss sugar! When will I be cured??? So this evening after my extremely mediocre dinner (which I may even post a recipe for IRONICALLY) I decided to take matters into my own hands and roast up some cinnamon almonds. It’s stupid easy.

All you need is:
½ cup almonds
1 t Cinnamon
Just the tiniest touch of oil
A pinch of salt

I used olive oil because I was desperate, but if I really wanted to make these good I would have used something fancy and less flavorful like coconut oil.

Basically you just preheat the oven (or toaster oven) to 350, toss the almonds, oil, cinnamon and salt together, lay the almonds out on a foil-lined pan, and toss that sucker in the oven for about 7 minutes.

Keep your eye on them and make sure you shake the pan frequently so they cook evenly. They make an outstanding snack for when your dinner just was not enough.
