Here’s a secret: I’m extremely lazy! Also I have terrible taste! So I LOVE cooking my scrambled eggs in the microwave. Sue me! It’s super easy, no mess, and takes like 2 minutes. On whole30 you have to eat hella eggs, so it’s always good to find a practical way to eat them.
As I’ve lamented, ½ of your whole30 meal has to be veggies, which can be, um, extremely depressing at breakfast. So I created this little scramble to make the veggies seem less sad.
You'll need:
- Broccoli
- Kale
- 2 eggs
- Salsa
(And oil and seasoning blah blah blah)
First, I wash and chop about ¾ cup of broccoli. I sauté it with a big handful of kale for a few minutes, then pour ¼ cup water over the whole thing and put a lid on it so they get nice and steamy.
While the veggies are steaming, crack 2 eggs into a mug and whisk them well, for about a minute.
Add salt, pepper, and herbes de provence (or whatever herb blend you like in your eggs) and whisk it again. Microwave times vary, but I usually do 1 minute, stir, 45 seconds and the eggs come out fluffy and perfect.
Before I take the veggies off the stove, I season them well with salt, cayenne, and fajita seasoning (the holy grail of seasoning). Once they’re nice and flavorful, I put them in a bowl. Top them with the eggs from the mug, and be sure to wash the mug right away so the egg doesn’t stick. Then top all of that with a few spoonfuls of Trader Joes Salsa Authentica, which I would argue is the perfect breakfast salsa. Also it’s $2. Mix it all up and enjoy!
This breakfast is not only whole30 approved, but super cheap (by my calculation under $1.75 for all the ingredients used) and it only takes about 10 minutes from start to finish. So don’t talk shit on microwaved eggs until you try them!!!
