In Defense of Oatmeal

Another day, another breakfast! I’ve had a sore throat the last few days… concerning but not unmanageable... So the most appealing foods for me have been warm, soft, and served in a bowl. 

Enter oatmeal. It’s easy to make, oats have a super long shelf life (shout-out doomsday preppers) and has a lot of healthy fiber. Oatmeal gets a bad rap because people think it’s bland, which is kind of true if you’re some kind of psychopath who eats plain oatmeal… but to that I say: do better. Apple Cinnamon oatmeal is available in those instant packs that are loaded with sugar and freaky ingredients (not to mention those dystopian freeze-dried apple chunks), but I like to make my own from scratch like Martha Effing Stuart. 

Yes it looks kinda like vomit. That's because they use oatmeal as vomit in movies.
Yet another example of oatmeal's completely unwarranted bad PR.

Apple Walnut Oatmeal

Serves 2
Prep time: 5 mins
Total time: 15 mins

Ingredients:
½ Tbs butter
1 small apple, diced (honeycrisp, gala, or fiji are ideal. If you eat red delicious please never speak to me again. You’re block’t)
Generous amount of cinnamon
1 Tbs brown sugar (optional)
⅓ cup chopped walnuts
2 cups milk (almond, oat, cow, or even water if you’re in a pinch. Water milk. You know.)
Pinch o’ salt
1 cup rolled oats

Melt the butter in a small saucepan over medium/low heat. Add apples, cinnamon, brown sugar (if using), and walnuts. Stir to coat. Cook, stirring occasionally, until apples soften slightly and walnuts are fragrant, about 3 minutes. Transfer to a bowl and put the saucepan back over heat (no need to wipe it out).

Add the milk of your choosing, salt, and a little more cinnamon to the saucepan and increase heat to medium/medium-high. Stir well. Once milk begins to simmer, add the oats and reduce heat to medium/medium-low, stirring frequently until oats are almost thickened, about 5 minutes. Add the apple-walnut mixture back into the pan and stir to combine. Cook to your desired consistency (thicka than a bowl a oatmeal) and serve hot!
