100% Foolproof Oatmeal Cookies

If I hear the phrase “in these uncertain times” one more time I’m gonna McFricken lose it!!!


That being said… in this… global pandemic… it can be hard to keep your pantry stocked with everything you need to make some sort of fancy cookie from Bon Appetit. (Yes this is a call-out post.) That’s where these cookies come in. 


They’re easy to make, come together quickly, and can be pretty much endlessly adapted for whatever ingredients you have on hand. Don’t have brown sugar? Use white sugar. Don’t have whole wheat flour? Use literally any flour. Don’t have raisins? Good, nobody likes them anyway!!! 


Feel free to experiment with these and let me know in the comments what worked for you! Shoot for the moon: even if you miss, you still have a pretty good cookie.

Foolproof Oatmeal Cookies

Prep time: 10 mins
Total time: 25 mins
Makes 12 cookies


Ingredients: 
1 stick butter, room temp
1/2 cup brown sugar 
1/4 tsp vanilla extract
1 egg
1 mashed ripe banana (optional but highly recommended)
3/4 cup flour (any flour works, I like whole wheat best)
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1 1/2 cups oats
Any combination of mix-ins: ½ cup chocolate chips, ½ cup chopped walnuts, ½ cup raisins, ½ cup shredded coconut


Preheat the oven to 350. Line a cookie sheet with parchment paper.


Using an electric mixer, beat butter and sugar until fluffy, about 2 mins. Add egg, vanilla, and banana, mix well. 


In a small bowl, whisk together flour, baking soda, cinnamon, and salt. Blend in dry ingredients on low. Using a spoon or rubber spatula, stir in oats until evenly combined. If it seems too wet, add more oats. Follow your heart. Stir in your desired mix-ins. Feel free to get creative. M&Ms might be interesting. Or peanut butter chips. Or dried cherries. 


Use a spoon to scoop onto the parchment-lined cookie tray. The cookies don’t spread much, so keep that in mind. 


Bake for 12-15 min. Let cool for 10 min before eating. These taste even better the next day, too, so try not to eat them all in one go. They last about 4-5 days in a tupperware.
