I'm so deep into whole30 I've convinced myself that this is a reasonable replacement for bread |
I found a loophole in whole30 that makes eating vegetables for breakfast VERY easy. According to the whole30 vegetarian shopping list, sweet potatoes are listed not only as a vegetable, but as a GOOD vegetable (as is indicated by the blue color). Therefore, when turned into hash browns or toast, that’s VEGETABLES for BREAKFAST! (Can you tell how excited I am about this discovery from my all-caps?)
Here’s how to do it.
Hash browns:
You’ll need:• ½ sweet potato, washed
• Olive oil
• OPTIONAL: onions, garlic, seasoning, etc
Start by grating the sweet potato into a bowl using a cheese grater. I got mine at Target for $3. Once the half-potato is grated all the way, use a paper towel to squeeze out as much liquid as you can from the hash. You want it to be as dry as possible so it can cook faster. Salt and season well.

Heat up a generous amount of olive oil in a rimmed pan. At this point, you can throw in your onions and garlic, but if you’re lazy like me you can just use garlic powder, fajita seasoning, salt and pepper. Add the potatoes and cover the pan. Let it cook for a while before checking on it. It’ll probably take around 10 minutes to get a nice crispy texture. Don’t mess with it too much by stirring.

When the potatoes are done you can slide them onto a plate and use the residual olive oil in the pan to fry up a couple of eggs. Breakfast is served! (For about $0.75!)

Sweet Potatoast:
You just need a sweet potato for this one.Slice the potato long-ways, like a piece of bread, the thinner the better. If you have one of those mandolin slicer things I bet this would be the perfect use for it, but I don’t and therefore I just used a good old fashioned knife. Pop it in the toaster on high for a long time: mine took about 10 or 12 minutes to get toasty. Patience is important for this because under-cooked sweet potatoast is really gross and chewy.

It tastes great topped with scrambled eggs (lazily cooked in the microwave as I’ve mentioned before). It also makes a good evening snack topped with almond butter.
